(INDIAN FLAT BREAD)

Yields 15-17

3 c whole wheat flour
1 - 2 tsp salt, to taste
1 - 2 Tbsp. canola oil
1-1/4 c water, add more if needed


Mix flour, salt, and vegetable oil well.  Add water and mix to form a round ball.

Knead 7 to10 minutes, until smooth.  Cover and let it rest for at least 15 to 30 minutes. 

Shape dough into golf size balls, and dust balls with flour.  Roll the dough out into thin circles.

Smear with a little oil and fold it into a triangular shape.  Roll out into 1/8 inch thick. (repeat these steps with the rest of the balls)

Heat pan over medium heat and place the paratha on the hot pan, cooking until the dough darkens slightly, flip and cook the other side until it gets a little brown.
