• Favorite pizza dough, rolled thin • 1 recipe Thai peanut sauce • Cooked chicken breast (with a little teriyaki & lemon), shredded or thinly sliced • 3 or 4 green onions, halved first lengthwise then crosswise • 2 medium tomatoes, thinly sliced • Smoked mozzarella, shredded • Fresh basil, sliced into ribbons
Preheat a pizza stone on the lowest oven rack for at least 30 minutes in a 500-degree oven. Place your rolled pizza crust on the stone, prick with a fork, and bake for 5-7 minutes or until the edges are barely golden.
Heat a skillet or grill pan over medium-high heat, and spray lightly with olive oil. Sauté/grill the green onions until slightly charred and wilted. Remove from heat.
Spread your par-baked pizza dough with the peanut sauce, chicken, green onions, tomato slices and mozzarella. Return to oven for 10 minutes or until cheese is melted and crust is crispy. Top with basil.
