Really Good Bruschetta

Becky Ringsby of SAVOR Specialty Chef Services created this recipe and she isn't joking! This recipe is REALLY GOOD!


• 1 loaf crusty country bread (about 10 by 5 inches, ends discarded)
• 1 garlic clove, peeled and halved
• 1/4 cup, plus 2 Tbsp. extra-virgin olive oil, plus more for serving
• Kosher or sea salt and freshly ground pepper
• 8 oz. feta cheese, crumbled (2 cups)
• 2 tsp. fresh lemon juice
• Desired toppings (see below)


Adjust oven rack so it is about 4 inches from heating element and heat broiler.  Slice bread cross-wise into 3/4-inch-thick pieces and place on foil-lined baking sheet.  Broil until bread is deep golden, 1-2 minutes.  Flip and repeat on second side.  Lightly rub 1 side of hot slices with cut side of garlic clove and brush with 1/4 cup olive oil.  Season with salt and pepper.  Process feta, lemon juice, 2 Tbsp. olive oil and 1/4 tsp. pepper in food processor until smooth, about 10 seconds, scraping down bowl with rubber spatula once during processing.  Divide feta mixture among taosts and spread to edges.  Top with desired toppings, drizzle with olive oil and serve.

TOPPING IDEAS:
1. Combine 24-oz. jar roasted red peppers (drained and diced), 1 minced garlic clove, 2 Tbsp. red wine vinegar, 2 T bsp. sugar, 1/4 tsp. red pepper flakes and 1/4 tsp. salt in medium bowl; let marinate for several minutes.  Using a fork, lift peppers from vinegar mixture and place on toasts.

2. Thinly-sliced strawberriess and mint leaf.  Drizzle with balsamic vinegar instead of olive oil before serving.

3. Tomato slice and basil leaf.

4. Thinly-sliced prosciutto, dried fig half and chopped chives.
